Leveraging research from Kansas State University and the University of Georgia, ABA partnered with AIB International to produce a food safety preventative controls validation methodology for representative SKUs – hamburger buns, muffins, whole wheat pan bread, crackers, cookies, and more. These interactive tool takes recorded time and temperature parameters, automatically determining the total process lethality for Salmonella.
The baking process kill step calculators increase food safety assurance, comply with the Food Safety Modernization Act (FSMA), and prevent costly per-product foundational research.
